my problem is i have some sausagemeat that really needs to be cooked tomorrow. i was thinking meatloaf, but i'm not really sure. any suggestions/recipes welcome.

Sausage rolls! Get a packet of ready-to-roll puff pastry or if you're feeling inventive make pastry from scratch... just roll it out, put a thin line of sausage down it, roll it up, cut them to the right length and bake!
edit - this may sound odd because I din't notice this was already suggested before opening my mouth...as usual.

I had a cooking dilemma last weekend! I was baking oaty cookies, but I was being absentminded and I followed the 'ingredients' piece of paper rather than the 'recipe' one.
So effectively I just put all the ingredients in a big bowl in the order they were on the list, instead of doing the flour and sugar in one bowl, and the oats in another bowl, and the eggs in another bowl, etc and doing something fancy and separate to each. I panicked, but it turned out absolutely fine. I think I'm going to always do that from now on – bung it all in - much less washing up.

^ I find bunging it all in usually works. When I was at school and did food as a class, our teacher always used to say there were three methods to most cooking. Whisking, *can't remember the second one so it must've been good*, and the bung-it-in.

Slow cook it on a radiator for several days. Put it in a tupperware first though or you'll make a mess.

For things like chocolate chip cookies, the reason you beat the sugar in the butter is to incorporate air into the mixture, and to get the fat (butter) evenly incorporated into everything else. I find that cookies turn out a little flat and grainy if I skip that step.
Onto another topic: as I am broke broke broke but have a cupboard full of lentils, does anyone have a creative (and inexpensive) way to use these up? Just plain lentils for dinner every night is getting pretty boring. Sadly, so is lentil soup.

I've made lentil curry before, with curry paste and things. One of the ones I made was tomato-based, I can't remember if I used chopped tomatoes, or fresh ones, but I remember putting that with curry paste and onions and garlic and things and it was pretty tasty. I think the other one was creamy, but I forget.
Hey so does anyone use quinoa? If so what have you done with it? I have used it in a cold salad with pesto, super tasty. I know you can have like caribbean curry with it as an alternative to rice, I've not done it yet. But, what else?

For lentils, make lentil burgers! Cook the lentils for 30 min with onions and garlic and a bay leaf (when I did this I followed the instructions for "lentil soup" on the back of the package so I don't quite remember what I did). When that's over with, form it into patties by mixing lentils with bread crumbs and maybe some more garlic. Fry in oil in a pan. It takes a few minutes to cook each side, so let it sit for a bit since moving it too soon might make it break apart. I should do this again. So delicious.

That lentil burger suggestion saved me from eating lentil soup all week, haha. We ran out of tofu/wheat gluten/beans/most proteins.
Culinary inquiry: What's a good way to make cookies without eggs? Mine always turn out dry/not all that good. I usually don't have chocolate chips at my disposal but I have oodles of oats.

I've heard of people using Ener-g egg replacer, but I've never tried it myself. I also know someone who swears by flax- and/or chia-seed "eggs" (pretty much, grind the seeds into a meal and mix with water) that the blogger ohsheglows uses. Xanthan gum can also be a good way to go. Here's a recipe for vegan oatmeal cookies: ohsheglows.com/2010/09/11/the-ultimate-vegan-oatmeal-raisin-cookie/Hands down, my favorite egg-free cookie is from the Babycakes cookbook- the cookies are vegan, gluten-free, and soy-free, so they call for some schmancy ingredients, but I can dig out the recipe if you're interested.

Yes, a banana is a good egg replacer for things like cookies! If eggs are just acting as the binder (like in cookies and brownies and such) then a banana or half a banana should do, but sometimes it can make then a little denser. Applesauce also works in that case. If the eggs are acting as a leavener then use vinegar and baking soda. There are other solutions, like silken tofu and flax seeds and stuff but I've never tried them. www.theppk.com/veganbaking.html

I did NOT know that fact about bananas! Today I made flapjacky things, with hazlenuts and chocolate. However I used those silicone cupcake case things and i'm worried it's made them a little dry. Also the tops got burnt
